I plan to slaughter, cut, wrap, and sell sides of beef raised on our ranch, in our community, maximum of 10 per year. I plan to buy a mobile processing unit. I'm told that only a custom/exempt licence will be required because of the small volume and that the fully cut up beef will only be sold in 1/2 a cow quanities. Is this true?

We have good hay & extra grazing this winter and are interested in taking in about 500 hd of calves from December to May. Our problem is in calculating what to charge per calf per day and if there is a formula we could use or data on others who have done this. We have heard anywhere from .60 to .92 per day.
