Q: How do you figure the live weight of a beef carcass that had a hanging weight of 581 pounds?

A: A beef steer that is fed to a finished weight and fat thickness (usually about 0.5 inches of backfat between the 12th and 13th rib) will have a dressing percent of about 63%. To determine live weight from hot carcass weight, take hot carcass weight and divide it by 0.63. In your case, 581 lb/0.63=922 lb live weight. 922 lb is light for the finished weight for most beef steers.
