Q: I am wondering what are the main differences between Holstein steers and colored cattle for locker beef. Ex: meat quality, feed efficiency, quantity.

A: Holstein (dairy type) will have a greater maintenance requirement, so it will take more feed to finish the animal for slaughter. Compared to a beef type animal, dairy cattle will have less muscling. A typical dressing percentage for beef cattle is 63% and dairy cattle would be 59%. Dairy breeds tend to marble (intramuscular fat) better than most beef breeds. There would be basically no difference in meat quality between dairy and beef meat if harvested at the same age.
