Q:   How tough would an 8 year old beef be? What is the best age to butcher cattle?

A:   An eight-year-old cow will make hamburger. It is probably to tough to make steaks or roasts. Most cattle that are finished for harvest will be harvested between 12 to 20 months of age. As cattle increase in age, tenderness decreases.
