Q:   How much butchered meat should you expect from a 1000 lb. beef cow? Is there a percentage of waste to factor in to the finished product? Should you get let's say 40% of the total weight in proccessed meat from the butcher or 60%?

A:   I assume this a beef cow and not a finished, 12 to 18 month-old steer. The dressing percent of a cow would be about 54% to 58%, so if we say 56%, then the carcass weight would be 560 lb. After processing, you will get about 50%, maybe a little more, maybe a little less so about 280 lb of packaged meat. If it is a cow, most of the meat will be hamburger, unless it is a young female that is 20 to 24 months old.
