Q: What is the best weight to butcher a steer?
|
|
A: There are a number of items that determine slaughter weight. One of the simpliest predictors to use is frame size, the taller the steer, usually the heavier at slaughter weight. The finished weight for a frame score 4 steer may be 225 pounds lighter at slaughter than an frame 7 steer. Most steers that I see range between frame 4 to frame 7 and finished weight would range from 1180 pounds to 1425. These are weights that the steers would have enough marbling to Quality Grade Choice.
